Preparation of Bean and Pasta Soup

Cook the apple and carrot in the hot oil for 2 minutes. Stir in the flour and curry powder to make a paste. Gradually stir in the stock, bring to the boil and cook until thickened. Add the chutney, sultanas, sugar, a little salt and pepper, and the lemon juice, vinegar. Cook very gently for 45 minutes – 1 hour or until the vegetables are very soft.
Cool slightly and either press through a sieve or blend until smooth in a liquidizer. Pour the pure in to the rinsed pan. Taste and adjust seasoning, if necessary. Reheat gently before serving.
